- 1 cup light corn syrup
- 1 cup packed brown sugar
- 1/3 cup melted butter
- 4 large eggs, beaten
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour
- 1/2 cup heavy cream (optional, for serving)
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Prepare the crust: Roll out the pie crust and press it into the bottom of the baking dish.
- Make the filling: In a large bowl, whisk together corn syrup, brown sugar, melted butter, eggs, vanilla extract, salt, and flour until smooth.
- Layer the ingredients: Sprinkle half of the chopped pecans over the pie crust. Pour half of the filling over the pecans, then repeat with the remaining pecans and filling.
- Bake the cobbler for 45 minutes or until the top is golden brown and the filling is set.
- Cool completely before slicing and serving. Optionally, top with heavy cream or vanilla ice cream.
